Coco Food Bazaar 

Last Saturday in Coco Beach Island Resort, instead of having the usual Garden Fiesta Party, Chef Noel and his cooks launched the first ever “Coco Food Bazaar” for a change. Four mini bahay kubos were set-up at the Carabao Garden for the following stations, Main Course, Barbeque or Grilling station, Mongolian and Dessert station.

In the Main Course station guest may choose from relyenong bangus, tortang talong with ground beef, kare-kare, fried chicken, pork afritada, fish sarciado, ginataang pusit, ampalaya with egg, ginisang sitaw at kalabasa and steamed rice.

While the Barbeque station have marinated liempo, chicken and jumbo hotdog that is grilled right. Mongolian beef stir-fry, chicken and pork stir-fry are your choices in the Mongolian Station. Have it cooked in front of you and enjoy while it is hot.

And for the Dessert station, Cook Weng of Touch of Asia also prepares buco pandan, buco salad, turon de manila and fresh lumpia.

The party started at 6:30 in the evening with the music of Coco Band. According to the guests the food was great and they find the price very affordable. With almost everyone joined that night we could say it was a big hit.

Coco Beach Father’s Day Treat 

Like a famous publisher once said, “Any man can be a father but it takes someone special to be a Dad”. On Father’s Day let us make him feel special more than anyone else. Coco Beach Island Resort have these activities not only for Father & Son but for the whole family to spend time together.

Early morning a free Fishing Trip for a team of Father & Son was arranged. A great way spending and bonding with Dad while enjoying the beauty of nature. At evening time, a treat to the main man and pillar of the Family with Chef Noel’s Special Father’s Day dinner which includes Seafood Gumbo, a heavily seasoned soup that combines varieties of seafoods and vegetables, Rib Eye Steak served with mashed potato and pepper or mushroom sauce and Brownie Sundae for dessert, a mouth watering sundae made with brownies, ice cream and chocolate syrup.

Zombie Cocktail  


Zombie cocktail

This month of June and July Coco Beach Island Resort's bartenders will show their boundless skills in the art of mixing drinks to make your stay more satisfying. Featuring their own version of Zombie Cocktail which popularized by Donn Beach a.k.a. Donn the “ Beachcomber”.  

This cocktail is a mixture of Rhum, lime juice, pineapple juice, orange juice, calamansi and few drops of grenadine and a slice of pineapple as garnish.

It has a sweet taste but mind you it has a strong effect. You may enjoy this cocktail at any time you want, during Happy Hour, or while lounging at the Silent Pool or simply lazing at the beach.

Try it now and tell us the Zombie effect on you after drinking this cocktail but not before telling us your room number so we know where to bring you just in case.

Just order from one of the waiters/waitresses and enjoy the good taste of it.

Fiesta Grande at Coco Beach  

Fiesta means a happy celebration wherein you may find different bands playing and activities to be done while Grande is big. Here at Coco Beach Island Resort, one Saturday night was turned into a Fiesta where mini Bahay Kubo had the buffet with all kind of Filipino dishes from starter up to dessert. There was also a live band and a game during the party.

The buffet contains, Starters like Kilawin Tuna, Ginataang suso with Kangkong, Tokwa’t Baboy, Tinolang Tahong with malunggay chicken noodle soup, Salad bar with thousand island and mango vinaigrette, pako (fern) with garlic mayo, potato salad. The main course were beef kare kare, lechong liempo, lechong manok, pancit canton with bihon, pork ribs kaldereta, steamed fish oriental mix, pandan rice and dessert are buko pandan, suman “sticky rice” and fresh fruits.




            All the dining staffs wore their “Cacha Dress”, also known as wheat sack flour. The world-class performance of Lahing Batangan Dance Troupe did another amazing cultural dance show. After the dinner it was party time, two of our guests performed on stage and joined the band.

Tomato, Basil & Kesong Puti 


Red ripe tomatoes and fresh Kesong Puti need only a sprinkling of fresh herbs, olive oil, salt and pepper to shine in this simple salad!

The fresh Kesong Puti or literally meaning "white cheese" is a local version of the mozzarella. Our very own Chef Noel makes the Kesong Puti for this salad!

Savor this Filipino infused Caprese Salad in which our main ingredient is a homemade fresh mozzarella from pure cow’s milk. It goes along with slices of red tomatoes and fresh basil leaves. The dish is topped with basil pesto sauce to give more flavor. With brown bread on the side, this may give you a perfect light meal.
